The easiest praline ice cream recipe

  • A rolling pin
  • A saucepan
  • A mixer
  • A sieve
  • A medium bowl
  • A whisk
  • A spatula
  • An ice cream maker

 

To serve 4 people, you will need:

  • 40 cl of organic milk
  • 10 cl of liquid premium cream
  • 1 vanilla pod
  • 4 eggs
  • 150g sugar
  • 150g of pralines (125g if you want it just a little less sweet)
  • Caramel for the topping.

 

Now with everything prepared, you can follow the different preparation steps.

 

  1. Crush the pralines using the rolling pin. Make sure to save a few for decoration.
  2. Pour the milk and cream into a saucepan, add the vanilla pod split in half, along with the scraped and crushed pralines. Bring to a simmer. Remove the pan from the heat and leave to infuse for 10 minutes. Mix then pass through a sieve.
  3. In a bowl, whisk the egg yolks with guar until the mixture whitens, then pour the flavored milk while continuing to whisk. Pour everything back into the saucepan and thicken gently over very low heat, stirring with a spatula.
  4. Let it cool, then place it in the refrigerator for at least one hour. Set in an ice cream maker.
  5. Divide the ice cream into cups, add the reserved pralines and serve.

 

Even if you don’t have an ice cream maker that’s fine. All you have to do is place your preparation in the freezer and mix it regularly to ensure it is smooth. You will still experience the best moment: when you coat your delicious praline ice cream with a homemade velvety caramel sauce.

 

If you’re in a hurry you have another alternative: cooks have done their best to make your job easier by creating high-quality caramel, you can find some delicious ones online and in delis. But if you are a perfectionist all the way through, you can make this caramel sauce yourself to complete this praline and caramel ice cream recipe.

 

To do this you will need 1/3 cup (or 80 ml) organic butter

1 cup (or 250 ml) lightly packed brown sugar

Two-thirds of a cup (or 160 ml) of 35% premium cream

Two tablespoons (or 30 ml) high-quality corn syrup 

 

First, melt the butter in a saucepan and add the brown sugar, cream, and corn syrup.

Stir constantly over low heat until the mixture comes to a full boil.

Let this succulent nectar cool and generously drizzle it over your dream dessert.

This delicious preparation can, of course, be kept cool. Just place your caramel sauce in an airtight container in the fridge. This allows it to still be easily used for about 2 weeks.
