How to make praline chestnut syrup?

A syrup is a pretty easy recipe to make at home and we recommend you try it if you want something tasty to complement your lattes, cakes, ice creams, cocktails and so forth! 


Ingredients

3 cups of water 

3 cups of organic sugar 

¾ cup of roasted organic chestnuts (see below how to roast them)

¾ cup of pralines (made with organic almonds)


Step 1 

Combine the water, sugar, chestnuts, and pralines in a saucepan and cook over medium heat until the sugar has dissolved. Don't worry if the mixture starts to boil, just lower the heat slightly and wait for the sugar to completely dissolve.


Step 2 

Once the sugar has completely dissolved, remove from the heat, and let cool for 30 minutes to 1 hour. Use a funnel to pour the praline chestnut syrup into a container. The syrup can be used immediately or stored in the refrigerator for 1 week in an airtight container.


Some useful advice

*Make your own premium flavoured soda by simply adding a few tablespoons of praline chestnut syrup to sparkling water


*Add a few teaspoons of praline chestnut syrup to sweeten your tea or coffee. 


*Use in cocktails, like mojitos or lime margaritas.


*Keep your cakes moist by brushing the layers with the praline chestnut syrup before stacking and frosting.


* brown sugar makes a rich, almost caramel-like syrup that works well in cocktails like an Old Fashioned, a Long Island Ice Tea or a delicious Mulata Daiquiri.


How to roast chestnuts?


INSTRUCTIONS


Preheat the oven to 425°F.

Dip the chestnuts in water and remove the floating ones (a sign that there has already been an intruder inside)

Using a sharp knife, make a horizontal incision on each chestnut (or a cross on the light base, the first solution is easier though). Very important, otherwise they will burst in the oven and that may be quite tedious to clean up!

Place the chestnuts on the oven rack covered with baking paper. Bake for about 20 minutes (or a little more). The chestnuts should open up and get a brown-ish color (but not too much).

Leave to cool then peel and enjoy.
